On a recent trip north into the Nile delta country we crossed into the Dakahlia Governorate. We noticed a different variety of large flat bread hanging in plastic bags at many stands along the road.
We stopped and picked some up to bring home. It turned out to be a delightful crisp bread that is made from corn and fenugreek seed. It's about the size and thickness of a large thin-crust pizza.
The name is eish merahrah, and while it is reported that it can be stored for several days, we never found out - it disappeared quickly.
